Quinoa is probably one of my all time favorite carbs! It has a unique taste...kind of a like a grain and seed combination. My favorite thing about it? It's a complete protein! If you compare Quinoa to potatoes or bread it has a more significant impact on your metabolic rate which makes it an awesome superfood! I generally mix it in stir frys, omelets (shocker), and whatever else I feel like! I'll be hopefully posting some recipes this week for my challenge but i'd love to hear/see how you use quinoa too!!
