Who said you have to stop baking with pumpkin when Thanksgiving is over??
This is one of my favorite easy recipes for waffles AND it's protein based! What you will need:
~1 Scoop of protein~1/2 cup pumpkin puree~1/2 cup egg whites~1/2 tsp baking powder~as much cinnamon as you want ( I LOVE cinnamon!) and I used french vanilla stevia drops to sweeten it a bit!
I just dump all the ingredients in a blender instead of hand mixing but you can do it either way! By this time your waffle maker should be hot and ready to go. Make sure you spray it before pouring the batter in (I've made that mistake before...it's not pretty).
Just pour and close the lid and wait about 3-5 minutes. My waffle maker just turns green when it's ready.
Here is the finished product! I like to use a different topping for each square. One square had light syrup, one had all natural peanut butter, one had all natural strawberry jam, and one had all natural fig and ginger jam...and I topped it with light whip cream...because...go hard or go home :D
