So much to catch up on! This post is going to be filled with LOTS of meal ideas and the reality that not all my workouts are that great but something is better than nothing! Keep that in mind ;)
I am often asked how I have managed to keep my energy, clear skin, and overall health while pregnant. Honestly, I would say 3 big things: Shakeology (and no this is not a sales pitch...it's the truth), staying active every day, and eating real food as much as I can. Shakeology is known to help increase energy but I never noticed it before because of how high energy I already am. BUT, since pregnancy I must say I too am surprised by my continued energy. I haven't missed a workout (besides scheduled rest days) so far in my pregnancy and continue to feel pretty good overall. FYI Shakeology is just 1 of my 6 meals a day. So for the rest of my meals I try to make sure there is a healthy balance of good carbs, fats, protein, and veggies.
I am on a crab cake kick! I like the Hungry Girl recipe for making crab cakes from scratch but these ones pictured above where a brand Graham bought for quick baking one day and they were GOOD. I have also loved just chopping tomatoes, cucumbers, and adding feta for a light and quick salad.
After some much needed rest I picked things back up on Friday and grilled chicken on my stove top grill with some stir fried veggies and noodles. If you can't have a grill where you live, these grills are AMAZING.
For dessert I went on LIVE again on Facebook.com/carenscorner to share this 2 ingredient chocolate bark. Literally tastes like almond joy but so much healthier and cleaner! Whew. Well, that was my week in a nutshell. There were highs and there were lows but through it all there is so much to be grateful for. My baby is healthy, husband and I's marriage just gets stronger during hard times because we pray even more together and lift each other up, faith & fitness business/ministry grows in depth because I am learning how to be a REAL coach. I am human. I am not perfect nor am I leading a team of perfect people with the goal to make others perfect. Nope. We are here to lead by example and that includes falling but then getting back up and being a light for others in that process. July faith & fitness challenge group kicked off today and is closed! You know I am already taking registration for the August Challenge Group though ;) Would love to get to know you, sister.
