Can you take a guess at what one of my favorite meal is?!?
BREAKFAST FOR DINNAH! This week has been a crazy awesome week of workouts and the best way I know to keep my body fit and healthy is to fuel it properly. 3 out of the 4 meals above include eggs...I love eggs.
Top Right: 4oz of baked Cod with a splash of this organic BBQ Papaya sauce (de-lish) with half a baked sweet potato and stir fried zucchini and mushroom!
Top Left: Believe it or not that's a salad! Just stir fry 2 eggs and cut up some turkey and just toss it in some spinach, roasted red peppers, cucumbers and tomato and you've got yourself a protein packed lunch *filling too!*
Bottom Right: This was my breakfast one day this week. Here is my secret to the perfect and fastest omelet to which I give credit to my dad because he taught it to me! ~ Before I do anything I put the oven on broil and select the high option. ~Then I stir fry tomatoes, onions and peppers for about 5 minutes then I lower the heat a bit and throw in a handful of spinach. ~After stirring that for another minute or so I add egg whites (I don't measure...it's probably like 3/4 of a cup or more...). ~I let the egg whites settle on their own for about 2-3 minutes and then turn off the stove, remove the pan, and place it on the highest rack in the oven so that the heat is directly on top of it. ~All it takes from here is 3-4 minutes and BAM...you've got an amazingly perfect delicious omelet.
~I may have a slight addiction to salsa so I usually just dump a bunch on there...
~Also added in this picture was a 1/4 cup of oatmeal with cinnamon :)
Bottom Right: WHAT? Yeah that omelet was dinner one night this week. I didn't get the rest of my dinner in the picture but I usually have some sort of carb (my fav is sweet potato) and veggie but the omelet was filled with veggies so I think I am good in that department.
