You know when you make epic plans then your plans don't work out the way you planned? Can I say the word plans one more time? Graham and I were supposed to go to Cape May, NJ this past weekend with his family for one last hurrah before baby until we realized there was a hurricane camping out there. Needless to say, neither of us wanted to drive 4 hours to sit inside for a day and a half, especially since Graham has been working 15 hour shifts every day and his "rechargeness" comes from being outside. Honestly we were both pretty disappointed. I know how much he loves Cape May and just the beach in general. After a mini pity party we decided to look at the weather here and list some things we have been wanting to do. We knew no good was going to come from complaining. After seeing that the weather in PA was gorgeous, we wrote down a list of everything we wanted to do: Hershey Gardens, Chocolate World, eat at The Grill on Chocolate Ave, go for walks, and get #gingyptian some clothes (we had yet to get him something from just us). It's incredible what a shift in attitude can do to your day! Yes sometimes circumstances straight up stink but you know what...do the "Double clap" and snap yourself out of it! Choose to be grateful and get creative!
Guys, I seriously missed my husband last week! I don't think I realized just how much until we have all that quality tie this weekend! So we have a new financial budget that has really limited how often we eat out and so when we do get to its such a treat! So far we have gone to the outlets to get our little guy some cute onesies and a new blender since we've had our little one for 4 years and both use it pretty intensely every morning for our shakes 😂 . We stopped at Starbucks and I got the berry hibiscus refresher with a splash of coconut milk and WOW...so delicious. For lunch we ate outdoors and split the hummus trio platter because hummus and pita is life 🙌🏼 and I got their signature salad 😳(coconut breaded chicken with strawberries and toasted almonds) could only eat half but it was so good. I took the rest home and had it for dinner!
So What is the dancing all about? Well for the September challenge, myself and 20+ ladies are committing to 30 days of working out, focusing on our nutrition, encouraging one another, and working toward an inside out transformation. At 36 weeks pregnant I was determined to finish strong and really wanted to try to do a whole program from start to finish. What better than Country Heat? The idea of dancing the last 4 weeks of my pregnancy got me excited...because let's be real...any hyped up cardio at this point isn't the smoothest for my body! With this program I have been sweating, smiling, getting my heart rate up, and feeling so good after! I share a few clips of the dance moves on Facebook.com/carenscorner if you are curious!
This dinner was SO easy and delicious! Totally gets you in the mood for fall. In it is 3 chopped up medium sweet potatoes, Apple chicken sausage, and 2 apples! I drizzled some olive oil and Tuscan seasoning to toss before sticking it in the oven. Stick in the oven for 30-45 minutes at 400 degrees. So good! I put mine over a small salad to get some greens in 👌🏽Best part is that it compliments my meal plan and gives baby and I fuel without the crash!
